I was trying to think of what I could make for a quick lunch today, and I remembered I had some leftover avocado. So I decided to toast up some marble rye bread and spread with the avocado (I love this on toast!) and then added some sliced tomato and over-easy eggs. This literally took me less than 10 minutes, and it is healthy and tasty!
