This recipe could NOT be any simpler. You only need 2 ingredients, and you most likely already have them in your kitchen. Adding some little extras to the dish, and you can have yourself a very healthy and tasty breakfast (or, any meal of the day really!)
Notes
If you don't mind them being less sweet, you can do this same recipe using 2 eggs - you'll get more pancakes
Ingredients
- 1 ripe banana
- 1-2 eggs
- 1/4 tsp cinnamon / nutmeg (optional)
- Maple Syrup (optional)
- Fresh berries or sliced fruit (optional)
Instructions
- Mash up 1 banana (try to get as many chunks out as you can)
- Add 1 (or 2) egg(s) and mix well
- Add cinnamon or nutmeg if you like
- Heat a pan with about a tsp coconut oil or butter. Poor mixture and form into pancake shapes (I can usually get about 3-4 pancakes)
- Let cook for 2 minutes per side
- Flip carefully between flipping! Don't mind the dark colouring (its from the sugars in the bananas)
- Add maple syrup and berries for an added touch
